TYPICAL MURCIAN DISHES
MICHIRONES
It is a recipe typical of Murcian gastronomy, deeply rooted in society. This dish is mainly consumed during the winter and is served as a tapa in the bars. It provides a great caloric contribution that helps fight the cold of winter. The michirones are served very hot in earthenware casserole. When it contains spicy ingredients such as chilli pepper, calluelas or spicy paprika, it is a very tasty dish.
The main ingredients are beans, ham bone, sausages, bacon, bay leaf and paprika.
CALDERO DEL MAR MENOR
The taste of the sea in a typical dish of the Region of Murcia. The Caldero rice is a typical seafood dish, strongly rooted in the cuisine of the Mar Menor region. Cooked with rice, ñoras ( a type of bellpepper ) and different types of fish caught in the salty Mar Menor waters.

PASTEL DE CARNE MURCIANA
From Arab origins the Pastel de Carne Murciana a recipe native to Murcia and typical. At present, due to its national reputation and its tradition in regional gastronomy, its sale has expanded to many other regions of Spain.
The Murcian pasty has experienced varieties, ranging from the puff pastry, to the ingredients of the filling, or the tricks that some pastry chefs add such as black pudding or blood sausages.
ZARAGOLLO
The zarangollo is a typical dish of orchard products, in Zaragoza they call it “calabacilla”, for Almería “frangollo”, in Latin America “calabacitas”; others know it as “scrambled courgette” and most cook this Murcian dish without knowing its name or origin: Murcian zarangollo. The main ingredients of Zarangollo are courgette, tender onions, potatoes, eggs, oil and salt. It is usually served at a warm temperature
PAPARAJOTES
The paparajotes are a typical dessert from the Murcian garden and the Campo de Cartagena made with lemon leaves covered with a dough of flour and egg that are fried and sprinkled with powdered sugar and cinnamon. The farmers elaborated it daily and took it after each meal, accompanying it with coffee . Main ingredients are: flour, egg, milk and lemon leaves. Even today the origin of the name remains a mystery.
